Midsummer seems a good time to celebrate, so raise a glass and drink in your harvests.


Aylishia, one of our Community Allotment volunteers from the Weald plots, has shared these tasty summer cocktails with us, using seasonal produce as a good excuse for a tipple!
ROCKETINI

makes 2
100ml mezcal
juice of half a lemon
handful rocket – chopped up
2 teaspoons agave syrup (or whatever liquid sugar)
Shake everything over ice, strain and serve in a martini glass.
RHUBARB RUMBLE

makes 2
couple sticks rhubarb
agave syrup (or whatever liquid sugar)
100ml aged tequila
50ml Cointreau or triple sec
juice of half a lime
Prepare the rhubarb in advance by stewing with a touch of water and agave syrup (to personal preference) until soft. Leave it to cool.
Whack all the ingredients together and shake with ice.
Serve over ice in a tumbler.
