Sue’s No Cook Chilled Cucumber Soup

BHOGG member Sue has given us this tried and tested recipe for those missed giant cucumbers.

When you find a huge cucumber hiding under the leaves, what do you do with it?  Answer: make delicious soup!

Ingredients

  • One large ‘forgotten’ cucumber
  • Greek Yoghurt – 3 tablespoons
  • Garlic – 2 cloves
  • Lemon – zest & juice
  • Parsley, Dill, Spring Onion – optional garnish

Method

I used one large fat cucumber which I peeled and put in the blender. Add the Greek yogurt, garlic cloves finely chopped and the juice and zest of a lemon. Whizz it all together.  Serve chilled. I added a drizzle of olive oil on the top of the bowls. It was very good.

I didn’t bother to remove the seeds, I thought I would need the additional liquid, which was the right move. And the blender dealt with the seeds anyway.  I also didn’t bother with the handful of parsley or dill which the recipe said, as I don’t grow parsley and the pigeons had eaten my dill!

Almost worth ‘forgetting’ to pick a cucumber that is ready!
